Dazza's Lunchtime Ready Meals - Please don't post replies :)

So here they are as requested. To keep this post tidy, If you like something, click like, but please don’t clog this up with comments, there will be a few recipes appearing bit by bit.

I will as much as possible post the cost per portion, calorie count. If the portion size is too small for anybody, sorry but bear in mind that these are not 3 course meals - my aim is always something below 400 calories - they are my batch cooking for lunchtime & I always have a yoghurt or something afterwards.

Also remember that I am a lazy cook, pre-chopped frozen veg, jars of sauce…

Tips:
Buying in even bigger bulk sizes can make these even cheaper per portion.

Microwave frozen veg first for about 3 minutes per veg & drain the excess water away before putting into the pan.

When put into containers, leave lids off to allow food to cool.

Do not freeze until cooled down.

Cooking an individual portion from frozen takes 6 minutes in a microwave (800w).

Recipe 1: Minced Lamb Rogan Josh

(4 portions: £1.41 per portion, 367 calories)

ASDA Good & Counted Rogan Josh Cooking Sauce 500g (75p 208 calories)
ASDA Butcher’s Selection Lamb Mince (Typically Less Than 20% Fat) 250g (£2.15 565 calories)

Cook the mince first. It’s mince, you should not need oil. Drain off fat when cooked & put to one side.

Next cook the veg:

300g each of (cost & calories per 300g in brackets)
ASDA Sliced Carrots £1 per kg (30p 84 calories)
Tesco Sliced Courgettes £1 per 700G (43p 68 calories)
ASDA Scratch Cook Sliced Mixed Peppers £1 per 600g (50p 63 calories)

Chuck in:
ASDA Grower’s Selection Washed Baby Spinach £1 per 300g (£1 66 calories)
(I chopped mine up a bit but down to preference as it will shrink a bit whilst cooking.)

Then add the mince & pour in the jar of sauce.

When it is all cooked (you will know, the sauce thickens slightly), divide into 4 takeaway containers.

Then I top with a quarter of a packet of:
ASDA Wholegrain Micro Rice 49p for 250g (49p 414 calories)

Finally if you take all my figures & divide by the 4 portions, under 400 calories & £1.40 a portion.

Recipe 2: Hunters BBQ Chicken

(4 portions: £1.51 per portion, 404 calories)

All calorie figures are taken from Tesco Grocery Website. For ease of use I have taken all ingredients from Tesco for this post, but as we have shopping delivered from 3 different supermarkets, it is possible to reduce the cost & calories further.

Tesco Hunters Chicken Cooking Sauce 515g (85p 456 calories)
Tesco Frozen Chicken Breasts 1kg £5.50 (using 4 324g approx £1.79 436 calories)

Defrost, dice & cook the chicken breasts first. Use some frylight. Sprinkle paprika over the chicken as you are cooking it. When ready put to one side.

Next cook the veg:

300g each of (cost & calories per 300g in brackets)
Tesco Diced Onions £1 per 500g (60p 124 calories)
Tesco Sliced Mushrooms £1 per 500G (60p 45 calories)
Tesco Scratch Cook Sliced Mixed Peppers £1 per 500g (60p 94 calories)

Add half a bag from:
Tesco Spinach £2 per 500g (£1 75 calories)

(I chopped mine up a bit but down to preference as it will shrink a bit whilst cooking.)

Then add the chicken & pour in the jar of sauce.

Recipe 3: Chinese Pork Mince & Vegetable Curry
(4 portions: £1.45 per portion, 356 calories)

All calorie figures are taken from Tesco Grocery Website. For ease of use I have taken all ingredients from Tesco for this post, but as we have shopping delivered from 3 different supermarkets, it is possible to reduce the cost & calories further, replace frozen with fresh etc.
Make these base recipes your own. :slight_smile:

500g 5% Pork Mince £3.00 (632 calories, 316 per recipe)

Cook half the mince & put to one side.

Then cook half a bag of each of the following:
(Calories in brackets are per half bag)
Tesco Diced Onions 500g £1 (104 calories)
Tesco Sliced Mushrooms 500g £1 (38 calories)
Tesco Scratch Cook Sliced Mixed Peppers 500g £1 (79 calories)

Plus a full bag of:
Tesco Beansprouts 300g 50p (143 calories per bag)

Add half a bag from:

Tesco Spinach £2 per 500g (£1 75 calories)
(I chopped mine up a bit but down to preference as it will shrink a bit whilst cooking.)

Add back half the pork mince & add the curry sauce:
Tesco Chinese Style Curry Sauce 500G 80p (252 calories) & leave to simmer for a few minutes, stirring regularly.

Then I top with a quarter of a packet of:
ASDA Wholegrain Micro Rice 49p for 250g (49p 414 calories)

The using the other half of the pork mince:

Recipe 4: Sweet & Sour Pork Mince & Vegetables
(4 portions: £1.44 per portion, 342 calories)

Exactly as per recipe 3, but a change of sauce:
Tesco Healthy Living Sweet And Sour Cooking Sauce 500G 75p (196 calories)
